Take a sweet potato and wash it. Dry and slice into discs about 1/4 inch thick.
Place on baking paper on a tray.
Put in a very slow oven as if you are making meringues, and cook for several hours. The longer you cook then the dryer they become. I usually do about 4 hours so they are not rock hard and have a bit of chew left in.
They will store in a container in the fridge for a couple of weeks. They are low in fat as well.
